Siete Perros País
Just like any stray dog, our friendly Santiago come up and gradually won our hearts with his humble and resilient way of being, in the same way that the centenary vines that give birth to this wine captivated us.
Coming from dry farmed old-vines more than 100 years old which are naturally farmed in a cool area of the Itata Valley, this País, an often forgotten grape, is fermented with its wild yeasts and minimal intervention.
This wine is our interpretation of the País grape, the very first variety planted in the Americas. Aged in stainless steel vats, without the use of oak barrels, in order to preserve its rich and fresh fruit.
Fresh, light and fruity, it pairs well with appetizers, Mediterranean foods and stews. Serve between 52°F and 57°F.
Unoaked red wine 100% País from Guarilihue Alto in Itata Valley, Chile. Made with naturally farmed grapes from ungrafted old vines, more than 100 years old. Dry-farmed, with no irrigation, using the help of horses and without the use of any pesticides. Fermented with its native yeasts and aged in stainless steel without use of oak. Not filtered, and no sulfites or additives used at any stage.
Checura sector in the Guarilihue/Coelemu zone, Itata Valley – This is the highest sector of Guarilihue,. Vineyard located approximately 18 miles from the Pacific Ocean with Old Vines more than 100 years old. Planted over highly decomposed granite and quartz soils and south sun exposure, with head-pruned (or “goblet”) vines.
Noncertified organic farming, focusing on giving maximum autonomy to the field and to amplifying the existing life in the ground and subsoil, to intervene as little as possible. No use of pesticides or chemical additives. Due the head-pruned vines, no machine or truck is used – all field work is made with the help of horses.
