The purest expression of carefully selected organic grapes, fermented with their native yeasts in clay amphora and without addition of sulphites.

Wine made without the use of any winemaking additive or sulphites addition. We ferment and age it in clay amphora, without temperature control, in order to deliver the purest expression of our grapes its vineyard.

pairing

It pairs very well with dishes with tomatoes, such as Neapolitan pizza, gnocchi and pasta with red sauces, caprese salad with fresh mozzarella. In general appetizers, charcuterie, pasta.

Wine

Red wine 100% Cabernet Franc from Los Guindos, Maipo Valley, Chile. Made with naturally farmed grapes from ungrafted vines without the use of any pesticides. Fermented with native yeasts and aged for 9 months in clay amphoras, without the addition of any additives or sulfites.  Not filtered, to keep the purest expression of a Cabernet Franc that surely did not come from this planet!

Vineyard

Los Guindos, Maipo Valley, Chile. Ungrafted rootstock vineyard planted in 1999 and relatively isolated from other plantations, eliminating the risk of cross contamination by chemical fertilizers and pesticides. Soils of decomposed granite with iron minerals.

Viticulture

Certified organic farming, focusing on giving maximum autonomy to the field and to amplifying the existing life in the ground and subsoil, to intervene as little as possible. Approximately 5,000 Kgs./Ha.

Winemaking

Early manual harvest, approximately one week before the regular timing for the zone. Spontaneous fermentation with native yeasts, without temperature control. The clusters are destemmed, and the berries are gravity-fed to 700 and 1000 liters clay amphoras, where fermentation takes about 1 month. The wine is then pressed, and it returns to the amphoras for aging. No use of any additive or addition of sulfites.

Aging

About 9 months in clay amphoras. After racking, the wine is bottled without filtering.

Winemaker

Luca Hodgkinson. He was born and raised in Priorat, Catalonia. Master in Bordeaux, has intentionally “unlearned” much of what he had learned academically. Responsible for the organic conversion of François Lurton’s vineyards in Chile and Argentina, he currently advises various sincere wine projects in Chile.

Wine
